Ancient Peaks Cabernet Sauvignon Paso Robles 2007

The Ancient Peaks Cabernet Sauvignon comes from the Margarita Vineyard in Santa Margarita, which has been under vine since the time of Juanipero Serra and the Franciscan missionaries. Made predominantly from Cabernet Sauvignon (92%) with small amounts of Zin, Petit Verdot and Malbec aged for 19 months in French and American oak barrels, the wine has a full, alluring nose of plums, black cherries, vanilla and smoke. Rich and jammy on the palate, the flavors tend toward kirsch and cassis accented by licorice and mint. The tannins are ripe and firm and there's good acidity too - moreso than in some of the wines from the warmer reaches of Paso to the north. Pair this with lamb, pork tenderloin or a girlled NY steak.
